Woodland as pantry

A model for “productive” wilding in UK forests, using Epping Forest as its canvass. A seasonal restaurant, built from the timber carefully harvested from the woodland, takes its produce from whatever the foraging parties find that day, introducing staff and locals to the exciting bounty of UK wildlife.
